Cheap student meal: Pasta-free lasagna

Lasagna can be a tricky dish to crack and has a lot of ingredients, this pasta-free lasagna is a cheaper and quicker option to the classic Italian dish.
  • Sunflower or vegetable oil
  • 4 tortillas
  • 1 can of chopped tomatoes
  • A bag of spinach
  • 1 small onion
  • 150 grams of bacon lardons
  • Grated cheese (quantity dependant on preference)
  1. Preheat the oven to 180C
  2. Put a dash of oil in the bottom of a baking dish (you want a dish that isn’t any bigger than the tortillas)
  3. Boil a pan of water and put the bag of spinach in for 3-5 minutes and then drain
  4. Cut the onion into small strips and lightly fry with the bacon lardons.
  5. Go back to your baking dish and place a tortilla at the bottom, loosely rip around the edges so it fits in reasonably neatly
  6. Pour 1/3 of the chopped tomatoes over the tortilla and spread out evenly
  7. Place 1/3 of the spinach and onions over the tomatoes
  8. Repeat steps 5-7 another two times
  9. Bake in the oven for 20 minutes or until golden brown on top
